Barbecue Chicken Meatballs

Barbecue Chicken Meatballs
These meatballs would be great as a meal with some veggies or put into submarine style bread to make a meatball sandwich. They would also be a great and healthy appetizer for any party!

Ingredients

  • (2 Pounds) Ground Chicken
  • (1 tsp) Vinegar
  • (1 tsp) Garlic
  • (1/2 tsp) Oregano
  • (1/2 tsp) Onion Powder
  • (1 tsp) Paprika
  • (1 tsp) Salt
  • (1/4 cup) Barbecue (Head Country)
  • (1 tbsp) Coconut Oil
  • (1 cup) Barbecue Sauce

Directions

Preheat oven to 350 degrees.  Line a baking sheet with foil and spray with cooking spray.
Combine the ground chicken with salt and pepper, spices, vinegar, and 1/4 cup of barbecue sauce. Roll the ground chicken into small meatballs.

Heat a large skillet over medium-high heat. When the skillet is hot, add the coconut oil, and then add half the meatballs to the skillet. Cook for about 10-15 minutes until golden brown on all sides. Put the browned meatballs on the lined baking sheet.

Repeat with the remaining meatballs, adding more oil to the skillet as needed.

When all of the meatballs have been cooked through and removed from the skillet, bake in the oven for 20-30 minutes to ensure they are all cooked through.

Heat the skillet to medium low. Add one cup of barbecue sauce to the skillet and let cook for 1 minute. Add all the meatballs back into the pan and toss to coat them in the sauce. Continue to cook for 5 minutes until the sauce begins to simmer. Remove from the heat and serve immediately.
