Chicken, Kale, & Sweet Potato Soup (Slow Cooker)

This soup is so tasty, plus healthy. It's packed full of nutrients and and leaves you feeling like you've putting something good in your body to fuel it! It's so easy to make and is Whole30 and Paleo approved.

- Servings: 6-8
- (2 large , peeled and chopped into 1 inch pieces) Sweet Potato
- (1 bunch) Kale (Dinosaur)
- (1 package) Chicken Breast
- (8 cups) Chicken Stock
- (2-3 tsp) Kosher Salt
- (2 tsp) Italian Seasoning
- (drizzle to serve) Olive Oil
Peel and chop the sweet potato potatoes.
Chop the kale.
Place all the ingredients in a 6-quart slow cooker, stirring to combine.
Cover and cook for 4-6 hours or until the potatoes and chicken are tender.
Shred the chicken with two forks.
Serve with a generous drizzle of olive oil.
