Spanish Bean & Chicken Chorizo Stew (Slow Cooker)
This stew is perfect for a cold rainy day! It's very healthy and full of flavor!

  • (1 package) Chicken Chorizo Bratwurst
  • (2) Carrots
  • (1) Onion
  • (3-4 Cups) Chicken Bone Broth
  • (1 can) Rotel
  • (2 tsp) Paprika
  • (2 TBSP) Parsley
  • (2 tsp) Paprika
  • (14 oz.) Mixed Dry Beans of Your Choice
  • Salt & Pepper


Soak the beans in the refrigerator overnight.

Rinse the beans and place in the slow cooker.

Peel, rinse, & chop your carrots and place in the slow cooker.

Chop your onions. (I use a food processor to chop the vegetables.)

Place the onion and Rotel (or you can use fresh peppers and tomatoes) in the slow cooker.

Add your chicken broth and herbs.  CLICK HERE to learn how to make your own bone broth! 

Cut the chorizo links into small pieces and place them in the slow cooker.  It is easier to cut if they are still somewhat frozen. 

Stir all the ingredients together.  If you would like it to be soupier add more broth or water. 

Cook on low for 6-8 hours.

Enjoy with a piece of bread from your local farmers market!
